From a very exclusive selection we reserve sirloin steaks from cow breeds: Pirenaica, Rubia, Minhota, Maronesa, Barrosa, Cachena, etc. National, Portuguese, and Central European breeds aged between 45/50 days.
Rib steak chops from cows over 7 years old, selected for their breed, marbling level, and fat; aged according to the animal's morphology.
